Yes. The five documents are self-contained Google Docs. The Notion space adds tracking across clients; without it you keep the documents in whatever folder structure you already use.
It covers repositories, environment variables, DNS, hosting, analytics and third-party accounts by name. It does not cover deployment procedures or infrastructure decommissioning — that needs a runbook written for your stack.
Yes. They are ordinary Google Docs with no locked elements. The licence covers use in your own client work, including documents you send to clients under your name.
